Summer salads should be easy. It’s hot out, you feel lethargic, and the only thing thats sounds good is a chilled glass of white wine (me, often). Fear not, this salad is as fresh and easy as a sauvignon blanc.
Grilled halloumi was something I picked up on a job while in Cyprus. It is a protein-packed cheese also known as squeaky cheese, or the cheese you can grill. Once you try it, your life is changed, just like mine was during those hot days working in Greece.
It was served over a bed of greens, sprinkled with sesame seeds, and drizzled with honey. A salad I will never forget. Last night after shooting/editing a batch of photos I was exhausted but needed something quick for dinner. Luckily halloumi cheese is in stock at Trader Joe’s in Manhattan for just $4.99 (!) but you can also find it at Whole Foods for about $10.99… I am telling you, when Trader Joe’s is out of stock, I cry a little inside.

I have to say I am a VERY lucky girl. For this dish I decided to add a little chicken for added protein. I had some organic free-range thinly sliced chicken breast in the fridge and forgot to marinade them. I ended up painting one side of the breast with horseradish mustard from Whole Foods and covered the other side with dried oregano, salt, and pepper. While the chicken sautés you can fix your bed of greens, I used spinach and some fresh farmer’s market lettuce. You can never have enough cheese right?… so I tossed in a bit of feta and to finish it off drizzled the dish with Trader Joe’s honey thyme balsamic olive oil as a dressing.
Finally we find out corner nook with a view and enjoy a new summer favorite dish. So easy yet quite posh if you ask me… I don’t feel bad having it for dinner a few nights a week.
Halloumi cheese (I used half go the container from Trader Joe’s in our salads)
Sprinkle of feta
2 thinly sliced chicken breast
2 tbsp Horseradish Mustard (dijon could work nicely as well)
3 good shakes of dried oregano to each chicken breast
Salt and pepper for the chicken (I use 2 twists of the Trader Joe’s salt and pepper grinders)
4 tbsp of Trader Joe’s “Honey Tyme Balsamic Olive Oil”
Heat a sauté pan to medium high, after the pan is hot add sliced Halloumi pieces to the pan (see approx size in images above). After about a minute on medium high the Halloumi should be browned on one side and ready to flip. Flip the Halloumi cheese and continue to cook for another minute or until both sides are equally browned.
Set aside the Halloumi and season the pan with a table spoon of olive oil or ghee/grassfed butter. After you add salt, pepper, and oregano to one side of each chicken breast, lay the breast in the pan and spoon on a tablespoon/dollop of Horseradish mustard on top of each chicken breast. After about 2 minutes the chicken should be browned on one side, and ready to flip. Cook for an additional 2-3 minutes on the other side until chicken is done.
Toss a bed of greens and add feta cheese and any other garnishes of your choice (sliced almonds, orange slices, cranberries, etc)
Top with sliced halloumi and grilled chicken.
Drizzle with the dressing as the final step, and enjoy!
