This salad is the freshest of the fresh and perfect side to any summer BBQ. Watermelon in the sweltering summer is everything, sometimes it’s so hot that all I want is for someone to cut a water melon in half and hand me a spoon… hello breakfast, lunch, and dinner. This salad looks pretty fancy but trust me, it is the easiest thing to make. So, you get to look like one of those active cooking/baking in a hot kitchen type of person… but really all it takes is a bit of cutting and sprinkling and mixing. Get ready.
It also has a lovely color and sets itself apart from other salads at the picnic! I find it quite hydrating as well, so it’s a double win for all of us.
1 large Watermelon
1/2 cup Crumbled Feta Cheese
1/3 cup of Trader Joes Honey Thyme Vinaigrette
A few grinds of fresh pepper
1 handfull of fresh mint leaves + A few more leaves for sprinkling over salad for garnish
The juice of 2 limes
Cut watermelon into cubes or smaller bite size pieces. Set aside in a bowl.
Put the vinaigrette, fresh pepper, a handful of mint, and juice of 2 limes in the blender or food processor and blend for about 30 seconds.
Sprinkle feta cheese over watermelon. Drizzle blended dressing, and sprinkle a few extra sliced mint leaves for color and garnish over the salad.
Serve cold on a hot day- you can even leave it in the refrigerator for a while to let the dressing really soak in. And lastly, enjoy 🙂
