Acai is a staple in my house all year round- but this frozen Brazilian treat makes for the perfect cooling lunch or even dinner for the summer. Sometimes I add some extra benefits to my normal Acai bowl recipe, and this time I added some ‘Leap‘ to the mix which ended up being a tropical flavor-filled game changer, packed with a full day’s serving of fruits and vegetables. Its always hard to get that authentic Brazilian off the street bowl taste but ‘Leap’ nailed it.
Leap is full of the flavors that you want in an acai bowl- goji berry, maqui berry, lucuma. They not only add a uniquely tropical flavor, but they are the super fruits that I look for when adding some extra antioxidants to a bowl. Seriously, this stuff tastes GOOD.
I usually top my acai bowls with homemade granola but this time I didn’t have some on hand so I used coco nibs, coconut flakes, almond butter, dried figs and MY FAVORITE puffed quinoa (found in the bulk section of Wholefoods).

frozen acai packet (Wholefoods)
1/2 cup frozen blueberries
handful of Frozen spinach
1 cup coconut milk or other nutmilk
1 Leap packet
coconut flakes, almond butter, cocoa nibs, puffed quinoa, and dried figs.
Place all smoothie bowl ingredients and blend on medium/high speed for about 30 seconds or until blended. If you prefer a thicker consistency, add frozen banana, or frozen grapes to the mix.
Add your favorite toppings and enjoy!
