Oats for breakfast is my jam… I could eat them everyday and not tire from it because there are so many ways to enjoy a comforting bowl of oats. Some days I have a sweet tooth in the morning and other days I crave somethings a little savory topped with an egg, the great thing about oats is they can satisfy both cravings.
Another childhood favorite is Norwegian brown cheese called gjetost over some freshly buttered grainy bread with a little homemade raspberry jam. One day I woke up craving both oats and gjetost and thought, what the heck… if I can add parmesan to my oats I might as well give gjetost a go too.
It was a success, for those of you who are not familiar with the taste of gjetost it reminds me of salted caramel. Its typically sliced thin with a Scandinavian cheese slicer and quite delicate, which makes it easy to mold into any shape. My grandma would aways roll a slice into a ball for me as a child to suck on. Norwegian brown cheese is everything to me, and adding it to my oats with a little cardamom brought my childhood back in the form of a bowl of comforting breakfast. I topped mine with some thinly sliced pears, raspberry jam and some whole milk yogurt. INSANELY GOOD!
1/4 cup oat bran
2 1/2 cups milk (you can use nut milk too)
1 tablespoon of grass fed butter
1 tsp salt
1tsp vanilla extract
4 slices of Gjetost cheese or 1 inch thick sliced block of cheese
a pinch of cardamom
Topping: more Gjetost, raspberry jam, sliced pears, yogurt.
Pour oats, milk, and salt into a medium sauce pan. Bring to a boil and then turn the heat to low and let cook slowly for 10 more minutes.
Stir in butter, vanilla extract, sliced gjetost, and cardamom.
Cook for another 10 minutes, serve immediately or store for later in the refrigerator.
Top with sliced pears, jam, and yogurt. ENJOY 🙂
